Ethiopian coffees are know for their distinct fruity and floral flavours and though we focus on Thai specialty coffee, we are very proud to offer a washed coffee from Guji area by Project Origin.
Project Origin is a project by 2015 world barista champion Sasa Sestic, also known from his documentary "The coffee man" where he is followed in his journey to become world barista champion.
In the documentary a process called "carbonic maceration" is loaned from the wine industry and introduced in the coffee making process. Now fast forward to 2019, coffee farmers around the world (including our friends at Tha Song Yang) are experimenting with the difficult to control but rewarding processing method.
By sharing his extended coffee knowledge with farms in producing countries they aim to elevate the quality of coffee growing and processing.
