Process: honey — float-graded, de-pulped with the mucilage kept on, dried 3–6 weeks to 11% moisture
Origin: Pasemuta village, Tak province, Northern Thailand
Roasted: in small batches at Bubba's Roastery, Koh Phangan
The story
Chang Plao has been taking care of multiple farms and families across the Tak and Chiang Mai regions for over nine years, and Bubba's has been visiting his family and coffee operations since 2016. For his honey process, the cherries are first float graded — placed in a tank of water where the floating cherries are removed — then de-pulped while keeping the mucilage, and dried slowly on raised beds. Before the coffee reaches our roastery it's de-hulled, colour-sorted and graded.
We roast to order and ship within 1–3 business days. No returns on coffee, but if something’s off — we’ll fix it.
Merch can be returned within 10 days if unused and tags are undamaged.

Keep your coffee in a cool, dry place in an airtight container—preferably not in the fridge. We recommend using it within 4 weeks of opening for the best flavor.
