Tha Song Yang, Koji

Tha Song Yang district in Tak province is located close to the more known coffee region Omkoi. Tha Song Yang is located in the mountains that border Burma and is famous for producing excellent coffees.

We met Chang Plao at in Bangkok at Thailand coffee fest in 2016, where he was showcasing his award winning coffee to the visitors of the festival. We were intrigued by his story, vision and passion for coffee that we decided to visit his family & coffee operation later the same year.

Since our first meeting our coffee friendship has grown a lot and we are very proud to have his coffee at our roastery.

The Koji mold is a priming agent that is widely used in Japan and Southeast Asia in the fermentation stage of many products known for their umami element, some of which are miso, amazake and sake. Essentially, Koji is a beneficial fungus (Most commonly grown on rice) that has been used to saccharify starches. Turning starch into sugar and dextrin so that it can be used for fermentation, Adding Koji to certain food and drink items breaks down the starches in them, helping produce new flavours.

Every year, Chang Plao experiments with new and exciting processes, and we feel he has found something quite special this year!

Coffee is packed in individual 225g coffee bags with valve.
